While this isn't the easiest option I've really enjoyed developing mini-project sites in HTML and JS directly, putting them on GitHub and then hosting via Github Pages or Netlify. All free if you don't use a custom domain. You don't get the building blocks and templates of site builders, but it's a total blank canvas I've loved delving into.

It is! I spent a decade making content for platforms like Instagram. Now I’m inverting the power dynamic. I publish to my own site and it auto publishes to Bluesky.
Yeah Portfolio is nice. I used that awhile ago for my own portfolio but moved it because I wasn't sure if I would still have access to Adobe. I think it would be worth looking into again.
That year long animation is wild! Love how the first few weeks(?) were just nonsense getting a feel for the medium after which it just went bananas!
Re websites, you can host static sites for free on GitHub which I use all the time for games/projects etc. No limit as far as I know and you retain access to the source so you aren’t tied to an eco system. There are lots of open source templates / generators to minimize the technical overhead. Happy to help get you set up if needed.
A cheap way might just to make a subdomain off your current site, like project1.volk.design etc. but just depends on what the end goal is.

Regarding the website question I agree with others saying sub-domains (blog.mitchell.com, project2.mitchell.com, etc) would be the cheapest way.

Yep - I use github pages for everything - personal and professional.
About the websites:
I don’t know if wools be cheap but definitely wools be easy to use a tool like framer or cardd.
Framer allows a bit more customisations and cardd would be the simplest one

Yeah with Figma + framer you can easily import any design there and the process gets smoother
